Base for two people
Quinoa
- 1 c quinoa
- 1 3/4 c water
Combine. Boil then simmer 15 minutes. Remove from heat, and cover. Let rest 10 minutes.
Curry
- 1 Tbs olive oil
- 1 onion (white or yellow)
- 1 Tbs ginger (minced) or 1 tsp (ground)
- 4 cloves garlic (minced)
- 1 1/2 Tbs curry powder
- 2 tsp garam masala
- 1 cup plant based milk (soy, oat, almond)
- 1 can tomatoes
- 1 can coconut milk (full fat)
- 1 lg sweet potato (diced)
- 2 cups spinach
- 2 Tbs lemon juice
Sautee vegetables. Add spices. Add milks and tomatoes. Simmer low 5 minutes. Add sweet potatoes. Simmer 20-30 minutes. Add spinach. Simmer 5 minutes.
